Deerfield Purple garlic is a hardneck variety that originated in Vietnam and was named in the early 1990s. It's known for its complex flavor, which is described as rich, mild, and garlicky with a nutty sweetness, and a spicy kick at the end. Deerfield Purple garlic is also known for its large, meaty cloves, which are tan with purple streaks and wrapped in thin, white, purple striped wrappers. The bulbs are medium to large in size, with creamy white to tan skin and purple pinstripes. Deerfield Purple garlic is considered one of the best baked garlics because it holds its flavor well when roasted.
Deerfield Purple garlic is adaptable and can grow in almost any region of the country, but it does best in areas with cold winters. It's recommended to plant it in the fall. Deerfield Purple garlic can produce 8–12 cloves per head and stores well for 5–7 months.
